1 Head Garlic
1 Tb Extra Virgin Olive Oil
2 Lb New Potatoes
+- 1/2 C Cultured Lowfat Buttermilk
Salt & Pepper to Taste

  • Oil the garlic, wrap it in foil and bake @ 350° for 1 hour.
  • Meanwhile wash the potatoes but don’t peel. Cut into chunks and boil in lightly salted water until tender… about 15 minutes. Drain.
  • Cut garlic in half crosswise (through the equator) and squeeze onto potatoes like you would squeeze half a lemon.
  • Mash or whip potatoes, adding buttermilk to desired consistency, season with salt & pepper, and you’re done.
